Ingredients
- 2pound boneless skinless chicken breasts* boneless skinless chicken thighs can also be substituted
- 1can (14.5oz per can) crushed tomatoes
- 1can (6oz per can) tomato paste
- 4oz diced pancetta
- 1 red peppersliced
- 2tablespoon extra virgin olive oil
- 2teaspoon balsamic vinegar
- 1tablespoon minced garlic
- 1tablespoon oregano
- 2teaspoon kosher salt
- 2teaspoon onion powder
- 1 1/2cup grated Parmesan cheese (not needed until day of cooking)
Materials
To Freeze and Cook Later
- Label your freezer bag with the name of the recipe, cooking instructions, and “use-by” date (3 months from when you prepped the meal).
- Add all ingredients except Parmesan cheese to the freezer bag.
- Remove as much air as possible, seal, and freeze for up to three months.
To Cook in Crockpot
- Cook on “low” setting for 4-6 hours.
- Shred chicken and mix with sauce.
- Top with Parmesan cheese and serve.
To Cook in Instant Pot
- Run the bag under warm water to loosen the frozen ingredients from the bag.
- Add the contents of the bag to the pot and pour 1 cup of water over the top. Set to pressure cook for 25 minutes.
- Natural release.
- Shred chicken and stir. (Optional: Saute for a few minutes if you want to thicken the sauce.)
- Top with Parmesan cheese and serve.

So I made this recipe last week and decided to cook it today. I thawed it in the fridge overnight and it was still frozen this morning, so I ran it under some warm water just to loosen it from the bag and dumped it into the crock pot still frozen. It worked perfectly fine. This is probably my absolute favorite thing I have made from this website as of yet. It has so much flavor!!! It’s so good I’m going to be freezing at least 3 more bags to have for later and I’m going to triple the recipe and make it for an event we are having.
I cannot find pancetta anywhere!!! I have been looking at every single store. I would love to make this. Does anyone have any suggestions?
I found it at Aldi’s. You could try Walmart too.
You could probably use diced ham instead.
It’s near the prosciutto and fancy cheeses. I didn’t think my store carried it either-found it about a month after making the recipe, when I was searching for fresh mozzarella.
I just ordered groceries from Walmart & they don’t have pancetta, so I looked up on the web what can be substituted for it & found that prosciutto is a substitute (they’re both Italian).

Often you can find it in the deli or near the deli. I have found it at Safeway, Kroger, Central Market, and Whole Foods. Ask someone in the deli.

I printed them on paper and simply added to my bags with packing tape prior to filling the bags. So far they are doing fine and less expense.

My entire family loved this recipe! I couldn’t find pancetta so I used thick-cut bacon instead. This meal was super flavorful! I cooked it in my instant pot.
This was absolutely fantastic! Hands down the best meal I’ve made from this site!! Followed the recipe exactly except I substituted skinless, boneless thighs for the breasts. Cooked in crockpot 4.5 hrs. on low and then shredded the chicken and put back in sauce. So tender, moist and juicy!
Hello! This one sure looks good! I’ve seen other people ask this question. Where do we find the labels for each of the recipes? Not the Avery labels but the instructions to print out to put on the bags.
Absolutely my family’s FAVORITE recipe. They ask for it again & again. We serve it over angel hair pasta.

This chicken cacciatore (I usually say “kitchen chacatore” accidentally) recipe is my family’s absolute favorite!! Having a daughter who doesn’t eat meat just leaves more for the rest of us!! It’s definitely HER loss.
