Pot Roast with Cherries
Serve on mashed potatoes or rice, with cucumber and carrot sticks on the side. You can use dried cranberries or another tangy dried fruit instead of the cherries, if you prefer.

Ingredients
- 1 2-lb boneless beef chuck shoulder roast
- 1cup dried cherries
- 1bag (14.4 oz per bag) frozen pearl onions
- 3tablespoons red wine vinegar
- 2tablespoons light brown sugar
- 2teaspoons kosher salt
Materials
To Freeze and Cook Later
- Label your freezer bag with the name of the recipe, cooking instructions, and “use-by” date. (Three months from when you prepped the meal.)
- Add all ingredients to your freezer bag.
- Remove as much air as possible, seal, and freeze for up to three months.
To Cook in Crockpot
- Cook on “low” for 8 hours.
- Coarsely shred the meat using two forks and serve using tongs or a slotted spoon.
To Cook in Instant Pot
- Add the frozen meal to the Instant Pot. Close the lid and twist the pressure valve to closed. Set to pressure cook for 1 hour and 10 minutes.
- Let the pressure release naturally for about 10 minutes, then twist the valve to release the remaining pressure and open the lid.
- Coarsely shred the meat using two forks and serve using a slotted spoon.
What would happen if I used frozen cherries instead of dried?
I also wonder how frozen cherries would work out. Would they disappear into the recipe? Please comment if you try it.
Is there something that you can sub if you can’t find pearl onions?
Make sure and check both the canned and frozen aisles for the onions. You could likely also just slice up an onion (not dice).
I just bought an Instant Pot. Everything I’ve read says you need at least 1 1/2 cups water to build pressure properly in it and to avoid the dreaded burn error. This recipe doesn’t seem like there’s enough liquid in it to use the Instant Pot. Also curious as to difference in using frozen cherries versus dried cherries. Any advice?
I follow her recipe and have had no problem. The only time I notice I’ve had “burn” issues is when cooking with tomato sauce. I just open and a bit of liquid if “burn” comes on.
