Ingredients
- 1lb sweet potatopeeled and chopped (2 medium sweet potatoes)
- 1/4lb carrotspeeled and chopped (2 carrots)
- 1cup frozen peas
- 8oz frozen cauliflower florets
- 1 yellow oniondiced (one cup)
- 1 jalapeno pepperseeded and diced
- 1inch fresh ginger rootpeeled and grated
- 6cloves garlicminced
- 1can (15oz per can) unsweetened coconut milk
- 1tablespoon garam masala
- 1teaspoon curry powder
- 1/2teaspoon salt
Materials
To Freeze and Cook
- Later Label your freezer bag with the name of the recipe, cooking instructions, and “use-by” date.
- Add all ingredients to your freezer bag.
- Remove as much air as possible, seal, and freeze.
To Cook
- Thaw freezer bag overnight in refrigerator or in water in the morning.
- Pour contents of freezer bag into your crockpot.
- Cook on "low" setting for 6-8 hours.

If I were to add chicken, how much to add? Do I add it as frozen whole breasts? Or as diced raw? And would I need to change/add liquid?
This was our first freezer meal to eat and man oh man is it AMAZING!!!!! The flavors are incredible and well balanced……just enough sweet, spicy, earthy. We will be making this one again and again and again!
I added a can of garbanzo beans to add protein and it was delicious.
I made this for dinner last night in the Instant Pot. It was left out to thaw during the day. Cooked on high pressure for 8 minutes. Served it with white jasmine rice, which also was cooked in the Instant Pot. So delicious. Only used half a jalapeno, and that level of heat was perfect for us. I received compliments on the aroma the next day, when I brought the leftovers for lunch. A bit more chopping involved than most of the recipes, but well worth it.
I made this today in the slow cooker. it smelled amazing when I got home, but it doesn’t taste amazing.
This was an amazing recipe…especially reading the comments and adding chickpeas for more protein.
I have a daughter-in-law who is vegan, gluten and dairy free. I would love to see more recipes that I could make for her.

This was such a big hit in our family! We left out the peppers (jalapeño) cause we have some little mouths, but added sriracha for those of us who like extra heat. Served over rice and added some green onion and cilantro on top. Will be making again!
