Ingredients
- 2pounds boneless skinless chicken breastscut into 1” pieces
- 1 yellow onionchopped
- 1 green pepperchopped
- 1 red pepperchopped
- 1 pineapplechopped
- 1bottle (18oz per bottle) spicy BBQ sauce
To Freeze and Cook Later
- Label your freezer bag with the name of the recipe, cooking instructions, and “use-by” date.
- Add all ingredients except chicken to your gallon-sized freezer bag.
- Add chicken to your quart-sized freezer bag. (I freeze my chicken separately because it turns a weird texture when it’s frozen with pineapple.)
- Remove as much air as possible, seal, and freeze.
To Cook
- Thaw freezer bag overnight in refrigerator or in water in the morning.
- Add contents of both freezer bags to crockpot.
- Cook on “low” setting for 4-6 hours.
Probably a silly question: can you freeze the quart size bag inside of the gallon? OR should it be frozen separately?
I do it separately because it will get covered in BBQ sauce if it’s with everything else.

I also freeze the gallon baggie inside another gallon baggie, along with these instructions. Nothing is touching, and I have the instructions at my fingertips. Since I’m new, I’m trying out all kinds of recipes on the family, and if they like one, I keep the instructions. If one doesn’t go over so well, I discard.

Absolutely. I have mentioned it in a previous response that I once managed a food prep business. We tried to keep all bags stuffed into one so they don’t get separated in the freezer.

I’m wondering about freezing everything together except the pineapple and adding that at the time? I’m new. First prep happening now. Excited!!

Note to self: add more pineapple. I only had canned pineapple and to me it didn’t seem like it was enough. This is a keeper too! The BBQ sauce flavor comes out in the recipe. So choose one you like!
My daughter is allergic to pineapple. Any suggestions for a substitute in this recipe?
I swapped out the BBQ sauce for a bottled Teriyaki Marinade for a delicious Asian flavor. Yum!

Traci, perhaps try crushed pineapple instead if you don’t care for the chunks. Or just use pineapple juice which is also available in cans.

What would the cooking instructions be for the instapot?
It would have helped me if it was stated 2 gallon size baggies and 1 quart size baggie..After filling each bag as noted, put each bag together in the other gallon baggie for freezing. I of course put the chicken bag in the gallon bag and had a little mess.

We tried this. The chicken was awful, it tasted chalky. Had to throw out and order pizza. Everything else was tasty.
What does “chalky” mean?
Could you freeze everything in gallon bag and keep pineapple in quart size instead so the chicken gets to marinade in the sauce?
Soooooo……..chicken was dry and family said there was no flavor. 😭 super disappointed!
This was my first recipe since joining, and it was delicious!…. the chicken I was going to use ended up getting used for another recipe, so I actually used cubes of pork instead….. definitely not dry, and so flavourful!! I added the meat to the sauce in the freezer bag, but kept the pineapple (I used fresh cubed pineapple from the deli) separate and added it to the pot in the morning….. I also added a little sweet Chili sauce, but I think the flavours would have been great with it without it (my husband loves things on the spicy side)…… this will be a favourite go to for sure, and I can’t wait to try more recipes! I love this site – thanks for all your hard work putting it all together, Kelly!
I made this recipe fresh from non frozen foods. The recipe has good flavor but the texture in the chicken breast and sauce was weird soggy. The chicken breast was soggy on the outside and dry on the inside. Any suggestions on how to fix this?
My chicken disintegrated and it was like soup. Is it supposed to have that much liquid? We weren’t able to eat it due to the chicken. Was cooked on low for 4 hours.

This was not something we liked. My husband and I eat pretty much anything but man it was hard to get down. I hate leaving bad reviews but if you don’t like pinnapple on pizza you probably won’t like this.

I can seem to find the labels for individual recipes. Sweet and sour BBQ chicken And Honey sesame chicken. I can find recipes. No pictures and can’t find the labels.
This was not a favorite of ours. It was way to much pineapple. I may try and make it with less than half a pineapple next time.
Also wondering what a good Spicy BBQ sauce would be for this recipe?
