Ingredients
- 1 2-lb boneless pork roastfat trimmed
- 1jar (24oz per jar) Paisley Farm dilled brussels sproutsundrained (If you can't find them, substitute 16oz jar dill pickle slices and 16oz bag frozen Brussels sprouts)
- 1/2stick unsalted butter1/4 cup or 4 tablespoons
- 1/4teaspoon pepper
- 8oz water1 cup
Materials
To Freeze and Cook Later
- Label your freezer bag with the name of the recipe, cooking instructions, and “use-by” date.
- Add all ingredients to your freezer bag.
- Remove as much air as possible, seal, and freeze.
To Cook
- Thaw freezer bag overnight in refrigerator or in water in the morning.
- Pour contents of freezer bag into your crockpot.
- Cook on "low" setting for 6-8 hours.
- Shred pork and mix with juice in crockpot.
This was AMAZING!!! I did the fresh Brussels and dill pickles version. My dad, who doesn’t eat anything green, had thirds of this!! Success!!
Oh and I did it in my instant pot. Pork(with 1/2 C pickle juice and 1/2 c water) for 43 min, released steam, tossed in the sliced pickles and Brussels, cooked for 2 more min. Everything was perfect. The Brussels sprouts were low buttery softness…so good!

Delicious and surprisingly heavy. I went with the alternative as I couldn’t find the dilled brussel sprouts. Personally I would say 6-8, maybe even 10 servings! Thanks!

This one really surprised me. I used a beef roast and a jar of home-made dill pickle spears. I poured the juice all over and put the spears on top of the meat. I quartered some potatoes to cook at the same time and made a one pot meal. It was plate-licking good!
